Justin made dinner for us all tonight and it is my favorite dinner ever! It is beef tenderloin which came out so tender that you can cut it with your fork. He also made roasted asparagus and wild rice which was so fabulous, I have the best husband! The kids liked it too which is always a plus.

Bistro Beef
Better Homes and Gardens New Cookbook

4 beef tenderloin steaks, cut 3/4" thick
1 Tbls dijon mustard
2 Tbls olive oil
2-4oz crimini mushrooms
1/3C dry red wine or sherry
1 Tbls white wine worchestershire sauce
2 tsp fresh snipped thyme

Spread mustard on both sides of steaks, add half of oil to pan and heat to medium high. Cook steaks on medium, turning once, to desired doneness (7-9 minutes for medium rare). Transfer to a platter.

Add remaining oil to drippings, add mushrooms and cook and stir for 4 minutes. Add remaining ingredients to pan and simmer uncovered for 3 minutes, spoon over steaks.

New Puppy Power!!


Hi everybody! Just wanted to let everyone we have a new puppy. his name is Jackson. He is a mini Dachshund. The kids really like him and so do we but we do not like the house breaking. Judah, the little boy that Mallory babysits is afraid of him but is learning to tell him "no".

Crazy Expensive Medications

I was reading on Preemie News earlier and here is an article about the pharmaceutical companies price gouging. It is so expensive to have a preemie baby anyway and hearing things like this just make me sick. This is a medication that Ryan took 3 times! Thank goodness for insurance.

Sick Babies and Television


I just want to say that when you have a two year old and a one year old baby that are both sick, the television is the best invention ever! Ryan's favorite is the Little Einsteins which he can tell you what episode he wants to watch. Today I was thanking everything that is holy for tv!

Summer Tomato Stack

Here is today's recipe from my book and it also fits in to the category "Food I Can Eat on My Diet" I ruined the Balsamic Reduction and didn't want to make it again so I ended up just drizzling a little bit of the balsamic vinegar over the top!

2 oz mozzarella cheese
1 ripe tomato
Salt and fresh ground pepper
1/2 tsp olive oil
4 large fresh basil

slice the mozzarella and the tomatoes, layering tomato, basil then mozzerella
Each tomato slice should be drizzled with a small amount of olive oil and salt and pepper.

Balsamic Reduction

1/2 C of balsamic vinegar
pinch of salt and pepper

heat in a small saucepan over medium-high heat. Cook about 7 minutes until the vinegar coats the pan but still flows freely. Transfer immediately to a bowl.

I found my favorite cookbook!

While we were in the garage yesterday unpacking, I found my favorite cookbook that was given to us by our friend Marcus's mom and dad for our wedding. It is called Bride and Groom First and Forever Cookbook and it is WONDERFUL! It has all sorts of different sections from Stocking your pantry to Inspirational menus for Holidays and special occasions.

One of our favorite things are the cocktail recipes. Our absolute favorite:

Sauza Margaritas

4oz Sauza Tequilla
4oz Triple Sec
1/4c Fresh lime Juice
6oz thawed limeade concentrate
1/2 c water

It makes 4 margaritas or hold the water and blend with ice. MMM yummy!

Today is the Day!

Today is the day that we close on our house!! I am so excited. I woke up at five. In the morning. How crazy is that? So I have gotten some blogging done and some emailing! Yea closing on the house today!!
